Thursday's Recipe Swap Meet!

Good afternoon everyone!  Today I've decided to run last week's recipe one more time just in case someone didn't get to see it.  I really think you'll enjoy it!

Pumpkin Squares

Pumpkin Squares

Serves about 12


  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 eggs
  • 1 (16-ounce) can pumpkin
  • 1-1/2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
1. Preheat the oven to 350 degrees. Coat a 9" x 13" baking dish with nonstick cooking spray. 2. In a large bowl, combine the flour, salt, baking powder, baking soda, cinnamon and nutmeg; mix well and set aside.
3. In another large bowl, beat together the remaining ingredients. Gradually add the flour mixture to the pumpkin mixture; beat well then pour batter into the baking dish.
4. Bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Let cool completely then cut into squares.

  2. These sound really delicious, but unlike Dolly, I don't drink milk, so I'll have mine with a cup of coffee, please. =)
